An herbal syrup that works great in cocktails, tea, and lemonade.

It does take some time to prepare so plan ahead. Comes out better if the mixture is shaken throughout the day while it infuses.

This syrup helps make a fantastic riff on a Bee's Knees but you may also find yourself adding it to unsweetened tea just as often!

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 3 tablespoons cullinary grade lavender

Equipment

  • Small sauce pot
  • 16oz mason jar
  • Funnel
  • Mesh strainer
  • Cheesecloth

Preparation

  1. Add water and lavender to the sauce pot
  2. Heat slowly over medium-low heat until the mixture simmers
  3. Reduce heat to low
  4. Add the sugar and gently stir until sugar is disolved
  5. Simmer mixture for 15 minutes
  6. Turn off heat and let cool
  7. Pour mixture (including lavender) into jar and tighen lid
  8. Let infuse in the refrigerator for 24 hours, shaking occassionally

After the mixture has infused for 24 hours it is recommended to do filtering in two stages.
The first step should be to remove the large particles. Recommend doing this with a mesh strainer.
The second step should be to remove the small particles. Recommend doing this with cheesecloth.

Label and store refrigerated for up to two weeks.
